Ching Ping Chicken with Soy Sauce
Ingredients

Ching Ping Chicken1 (around 3 lbs) Ginger 4 slices Green onion 3 stalks (chopped) Marinade
A B Light soy sauce 4 tbsp Loas powder 3 tbsp Dark soy sauce 2 tbsp Salt 2 tbsp Water 1 cup Rock sugar 2 tbsp Cooking wine 1 tbsp
1. Rinse, wipe dry and spread marinade B onto the inside of the chicken.
2. Heat oil and sauté ginger slices and green onion. Pour in marinade A and bring to boil.
3. Add chicken (breast down) and poach in medium heat for 10 minutes. Turn chicken upside down and poach for another 15 minutes until the sauce is reduced.
4. Remove chicken. Chop into chunks and pour the sauce onto it. Ready to serve.
