    • Ching Ping Chicken with Loas Powder (Galangal) in Clay Pot

      Ingredients

      Golden Maple
      Ching Ping Chicken
      1 (around 3 lbs)
      Aluminum foil 1 large piece

      Marinade

      A   B  
      Laos powder 1 tbsp Loas powder 3 tbsp
      Cooking wine 2 tbsp Salt 2 tbsp
      Salt a pinch Chinese red pepper a pinch
      Chicken broth ½ cup Green onion 1 stalk (sectioned)
          Star Anise a pinch
          Shallot cloves 6 (sliced)
          Ginger 8 slices
          Sesame oil 1 tsp

    1. Rinse, wipe dry and spread marinade B onto the chicken (inside and outside). Set aside and let it stand to dry for 2 hours. Steam chicken for 25 minutes.

    2. Let chicken cool down and chop into chunks. Put chicken chunks in a clay pot.

    3. Heat oil, add marinade A. Stir well in low heat.

    4. Pour laos powder mixture into the chicken chunks. Cover up tightly for 5 minutes. Ready to serve.
