Ching Ping Chicken with Chinese Wine
Ingredients
Golden Maple
Ching Ping Chicken1 (around 3 lbs) Ginger 6 slices Green onion 3 stalk Parsley 2 stalks Marinade
Salt 1 tsp Cooking wine 1 cup Chicken broth 1 cup Rock sugar (crushed) 1 tsp
1.Rinse chicken and place it in 6-7 cups of boiling water with green onion, ginger and parsley. Lower the heat and simmer for 25 minutes.
2. Remove the chicken and put it in iced water to cool down. Remove from iced water and drain dry.
3. Bring chicken broth to boil. Add rock sugar and salt and cook for 5 minutes. Let the broth cool and add cooking wine.
4. Immerse chicken into broth for 5 hours. (Turn chicken occasionally)
5. Remove chicken and chop into chunks. Top with sauce and serve.
