Fried Shanghai Noodle with Cabbage & Shredded Pork
Fresh Shanghai noodle 600g
(For dry noodle, cook in boiling water for 15-20 minutes until tender)
Carrot 1/2 stalk
Cabbage 1/2 head
Green pepper 1
Pork 120g
Oil 2 tbsp
Dark soy sauce 3 tbsp
Light soy sauce 2 tbsp
Sichuan chilli bean paste 1 tbsp
Sugar 1 tsp
Salt 1 tsp

1. Cut carrot, cabbage, green pepper and pork in strips.
2. Heat oil in wok, add carrot, cabbage, green pepper, pork and stir-fry.
3. Add dark soy sauce, light soy sauce, Sichuan chilli bean paste and stir-fry.
4. Add Shanghai noodle, stir-fry for about 3 minutes, add sugar and salt.
5. Serve hot.
