Mince garlic and shallots. Cut red chilli into thin strips. |

Peel off the skin of fresh squid and gut; clean thoroughly. Cut the squid into thick strips. Set aside and drain. |

Place squid in a bowl, add egg, salt, sesame oil, white pepper, 3-tbsp cornstarch and 1-tbsp oil. Mix well. |

Heat up a pot with oil. Deep-fry squid with maximum heat until crispy. Remove and put aside. |

In a wok, stir-fry garlic shallots, and red chilli. |

Reduce the heat, place the deep-fried squids in wok. Season with salt. |

Ready to serve. |
