Fried Tilapia with Soy Bean Paste
Fresh squid 400g
Garlic cloves 3
Shallot cloves 3
Red chilli a little
Egg 1
Cornstarch 3 tbsp
Oil 3 tbsp
Soy sauce 5 tbsp
White pepper a pinch
Sesame oil a little
Salt 1/2 tsp

1. Mince garlic and shallots. Cut red chilli into thin strips.
2. Peel off the skin of fresh squid and gut; clean thoroughly. Cut the squid into thick strips. Set aside and drain.
3. Place squid in a bowl, add egg, salt, sesame oil, white pepper, 3-tbsp cornstarch and 1-tbsp oil. Mix well.
4. Heat up a pot with oil. Deep-fry squid with maximum heat until crispy. Remove and put aside.
5. In a wok, stir-fry garlic shallots, and red chilli.
6. Reduce the heat, place the deep-fried squids in wok. Season with salt.
7. Ready to serve.
